Corn Bread

Ingredients

1 cup all-purpose flour
1 cup yellow cornmeal
1 tablespoon baking powder
1 teaspoon salt
2 tablespoons honey
1/3 cup vegetable oil
2 extra large eggs
1 cup milk
½ cup raisins

Directions

Preheat oven to 400°F. Grease a 9 x 9 inch baking pan.

In a medium bowl, stir together flour, cornmeal, baking powder and salt.

In a large bowl, with wire whisk or fork, mix eggs, add oil and honey. Add dry ingredients along with milk and raisins into this large bowl until blended.

Spread batter evenly in prepared pan.

Bake for 20 minutes, or until a toothpick inserted in center of bread comes out clean.

My Comments

I sometimes use cranberries instead of raisins.
