| TACO QUESADILLAS- 5 points 1/2 lb. extra lean ground turkey breast 1/4 cup chopped onion 1/4 cup chopped green pepper 2 tbs. taco seasoning mix- any kind 1/2 cup chunky salsa 3 oz. (3/4 cup) shredded low-fat sharp cheddar 3 oz. (3/4 cup) shredded fat-free cheddar 10 (6-inch) low-fat flour tortillas (1 point each) ***Be careful when you buy your flour tortillas because some brands have up to 3 points for each tortilla |

| Spray a non-stick skillet with cooking spray and heat over medium heat. Add the ground turkey, stirring to break up the meat and cook until no longer pink. Add the onion, green pepper and taco seasoning mix. Cook until the meat begins to brown and the vegetables are crisp-tender. Stir in the salsa and heat through. Combine the low-fat and fat-free cheeses. You will have about 1 1/2 cups total. This amount will allow you to use about 4 tbs. of cheese for each quesadilla. Heat another non-stick skillet (or griddle) over medium heat and place one tortilla in the pan. Sprinkle with 2 tbs. of the cheese mixture. Top this with 1/5 of the turkey mixture. Sprinkle with another 2 tbs. of the cheese and then place another flour tortilla on top, pressing slightly. Cook for 3-4 minutes, until the bottom is browned and crisp. Spray the top tortilla with cooking spray and carefully turn the quesadilla over with a large spatula. Cook for another 3-4 minutes. Remove to a serving platter, let cool slightly and cut into 4 wedges. Repeat with the remaining ingredients to make a total of 5 quesadillas. These can be made ahead and refrigerated. Reheat them in a non-stick skillet sprayed with cooking spray until warmed through (about 2 minutes per side). You can also reheat them on a baking sheet in a 375 degree oven for 15-20 minutes. One quesadilla (4 wedges) is one serving for 5 points. |
