| LEMON CHICKEN WITH OREGANO- 4 points 1 cup fresh lemon juice (about 4 large lemons) 2 tbs. olive oil 3 cloves garlic, crushed 1 tbs. dried oregano 4 skinless, boneless chicken breast halves cooking spray 1/4 tsp. salt 1/4 tsp. black pepper Combine the lemon juice, olive oil, garlic and oregano in a zip-top plastic bag. Add the chicken. Seal and marinate in the refrigerator 3 hours or overnight, turning occasionally. Preheat oven to 350 degrees F. Remove chicken from bag and discard the marinade. Place the chicken breasts on a broiler pan coated with cooking spray. Sprinkle with salt and pepper. Bake for 45 minutes, or until chicken is done. Makes 4 servings, 4 points each. |
