| APPLE CINNAMON BREAD PUDDING- 4 points 1/2 cup packed brown sugar 1 1/2 tsp. cinnamon 1 1/4 cups skim milk 2 eggs, beaten 6 slices bread, cut into 1" cubes 1 medium apple, peeled and chopped (about 1 cup) Preheat oven to 375 degrees F. Spray a 9" X 9" baking pan with cooking spray and set aside. In a large bowl, combine the brown sugar and cinnamon. Add the milk and eggs and mix well. Stir in the bread cubes. Let stand at room temperature to soak for about 5 minutes. Stir in the chopped apples. Pour mixture into the baking pan and bake for 20 to 30 minutes until the center is set and a knife inserted in the center comes out clean. Makes 6 servings, 4 points each. |

| BUTTERMILK PANCAKES- 2 points each 1 cup all-purpose flour 2 tbs. sugar 1 tsp. baking powder 1/2 tsp. baking soda 1/4 tsp. salt 1 cup low-fat buttermilk 1 tbs. canola oil 1 large egg, lightly beaten cooking spray Combine flour, sugar, baking powder, baking soda and salt in a large bowl. Mix together the buttermilk, oil and egg and add to the flour mixture, stirring until smooth. Spoon about 1/4 cup batter onto a hot nonstick griddle or skillet coated with cooking spray. Turn the pancakes when the tops are covered with bubbles and the edges are browned. This recipe makes about 9 (4-inch) pancakes, 2 points each. |
