Russian tea-drinking with Strawberries

Strawberry Sbiten

Pour 7 cups of water over 3 cups of honey and 2 cups of fresh strawberries, mix and boil over a low heat for about 2 hours stirring constantly and skimming off the foam. When the drink is cool, strain it. The same method of cooking a sbiten applies to other berries - raspberry, black currant, strawberry or bilberry - used as its base.
