The boundaries of Louisiana are a collection of landscapes – marshes, wetlands, hills, forests, prairies, the great Atchafalaya Basin and the coastal waters of the Gulf. The history of the people who live within those boundaries is as diverse as the landscape, and all have contributed to the evolution of Creole and Cajun cuisine.
