Chop the black beans and garlic so they are really fine. Fry them in the oil for a minute until they smell really fragrant, then remove from the heat and stir in the soy, oyster sauce and honey. Leave to cool.
Take the drumsticks and cut the knuckle off of each end using the heel of the knife and sharp hit with the palm of your hand. Push the bone up from the fat end of the drumstick so that it sticks out of the top. Grab hold of the tendons, there’s several in each drumstick, and pull them out. A dry piece of kitchen cloth makes this easier, or a clean pair of pliers.
Repeat with all the drumsticks, then leave to marinate in the black bean marinade in a fridge for several hours or even overnight if you have the time.
Preheat an oven to 200°C. Sit the drumstick lollipops up on a baking tray so they are stood up and bake them for 20 minutes.
