Boil a full kettle. Place the apples into a bowl and pour over the boiling water. Drain the apples after 30 seconds or so and twist off the stalks. Push the skewers into the apples.
Tip the sugar into a pan along with 100ml of water. Heat it over a medium heat until the sugar dissolves. Stir in the vinegar. Bubble the mixture to 140ºC.
Line a baking tray with greaseproof paper or a silicon mat. Dip the apples into the mixture and place them onto the tray to set.
Melt the chocolates separately over a pan of simmering water. Drizzle the melted chocolates over the apples and leave to set. Serves 10
