Recipes

Peach Enchiladas

These are wonderful with vanilla ice cream.  Only thing is they are very addictive, before I knew it, I made 3 batches to take here and there!
4 fresh peaches - quartered (you don't have to peel the peaches)
2 8-oz cans crescent rolls
2 sticks of butter - melted
1 2/3 cups sugar
1 teaspoon cinnamon
1 12-oz can Mountain Dew

1) Preheat oven to 350 degrees.
2) Mix melted butter, sugar and cinnamon.
3) Roll one of the quartered peaches, starting from the large end of the crescent roll to the small end and place in a 12 x 10 x 2 pan or casserole dish that has been sprayed with Pam.  Pour butter mixture over this.  Pour Mountain Dew over all.  
4) Bake for 45 minutes.
