| Smokey Honey Barbecue Sauce � Makes 2 Cups� Ingredients 1 cup honey 1 cup chili sauce 1/2 cup cider vinegar 1 teaspoon prepared mustard 1 teaspoon Worcestershire sauce 1/2 teaspoon pepper 1/2 teaspoon minced garlic 2 to 3 drops liquid smoke Directions Combine all ingredients except liquid smoke in medium saucepan over medium heat. Cook, stirring frequently, 20 to 30 minutes. Remove from heat; add liquid smoke to taste. | Honey-Glazed Barbecued Spareribs � Makes 4-6 servings � Ingredients 4 pounds lean pork spareribs 1 Water Dash Salt and pepper 1/2 cup honey 1/4 cup lemon juice 2 tsp. grated lemon peel and 2 tsp. grated ginger root 1 clove garlic, minced 1 teaspoon rosemary, crushed 1/2 tsp. crushed red chilies 1/2 tsp. ground sage Directions Completely cover spareribs with water in a large pot or deep skillet. Bring to boil, uncovered, over medium heat. Simmer 4 minutes. Drain liquid, reserving it for stock for later use, if desired. Season both sides of spareribs with salt and pepper. Place spareribs on rack in roasting pan. Cover loosely with aluminum foil. Bake at 450�F 15 minutes. Combine remaining ingredients; mix well. Reduce oven temperature to 350�F. Brush spareribs with honey mixture. Bake 1 hour longer or until fully cooked, brushing with honey mixture every 15 minutes. Makes 4 to 6 servings. For Barbecue: Boil spareribs as described above, over medium heat. Simmer 4 minutes and drain liquid. Season both sides of spareribs with salt and pepper. Place spareribs on barbecue grill over hot coals. Cook approximately 30 minutes per side. Brush meat side generously with honey mixture twice during last 15 minutes of cooking time. |
| Honey-Mustard Roasted Potatoes � Makes 4 servings � Ingredients 4 large baking potatoes (about 2 pounds) 1/2 Dijon mustard 1/4 cup of honey 1/2 teaspoon crushed dried thyme leaves To taste salt and pepper Directions Peel potatoes and cut each into 6 to 8 pieces. Cover potatoes with salted water in large saucepan. Bring to a boil over medium-high heat. Cook potatoes 12 to 15 minutes or until just tender. Drain. Combine mustard, honey and thyme in small bowl. Toss potatoes with honey-thyme mustard in large bowl until evenly coated. Arrange potatoes on foil-lined baking sheet coated with nonstick cooking spray. Bake at 375�F for 20 minutes or until potatoes begin to brown around edges. Season to taste with salt and pepper. | Whipped Honey Butter Makes 2 cups. 1 cup (12 ounces) whipped or cremed honey, softened if necessary 1/2 pound (2 sticks) butter, softened directions In a medium bowl, mix together honey and butter. Spoon into jars with tight-fitting lids. Store in refrigerator. (this is great with cornbread) Variation: Stir 1-1/2 teaspoons grated orange peel into honey-butter mixture. |
| Honey Cornbread � Makes 9 servings � Ingredients 1 cup yellow corn meal 1 cup all-purpose flour 2 teaspoons baking powder 1 teaspoon baking soda 1 teaspoon salt 1 cup milk 1/4 cup honey 1 egg 2 tablespoons vegetable oil Directions In large bowl, combine corn meal, flour, baking powder, baking soda and salt. In small bowl, whisk together milk, honey, egg and oil. Add to flour mixture; stir until just combined. Pour batter into a well-greased 8 x 8-inch baking pan. Bake at 350�F for 25 to 30 minutes or until a wooden pick inserted near center comes out clean. Serve warm.
