| Sweet Banana Bread 1/2 cup honey 1/3 cup butter or margarine 1 teaspoon vanilla 2 eggs 3/4 cup whole wheat flour 1/2 cup all-purpose flour 1/2 cup quick-cooking rolled oats 1 teaspoon baking powder 1 teaspoon ground nutmeg 1/2 teaspoon salt 1 cup mashed ripe bananas 1/2 cup chopped walnuts directions Cream honey and butter in large bowl with electric mixer until fluffy. Beat in vanilla. Add eggs, one at a time, beating well after each addition, Combine dry ingredients in small bowl; add to honey mixture alternately with bananas, blending well. Stir in walnuts. Spoon batter into greased and floured 9x5x 3-inch loaf pan. Bake in preheated 325�F oven 50 to 55 minutes or until a wooden toothpick inserted near center comes out clean. Cool in pan on a wire rack 15 minutes. Remove from pan; cool completely on a wire rack. |
| Honey Garlic Pork Chops Makes 4 servings 1/4 cup lemon juice 1/4 cup honey 2 tablespoons soy sauce 1 tablespoon dry sherry 2 cloves garlic, minced 4 boneless center-cut lean pork chops (about 4 ounces each) directions Combine all ingredients except pork chops in small bowl. Place pork in shallow baking dish; pour marinade over pork. Cover and Refrigerate 4 hours or overnight. Remove pork from marinade. heat remaining marinade in small saucepan over medium heat to simmer. Broil pork 4 to 6 inches from heat source 12 to 15 minutes, turning once during cooking and basting frequently with marinade. (May also be grilled.) | Honey Sweet and Sour Sauce Makes 1/2 cup 1/2 cup ketchup 1/4 cup honey 2 tbsp. lemon juice 1 tsp. cornstarch 1/2 tsp. garlic salt directions Combine all ingredients; cook and stir over medium heat 2-3 minutes or until mixture boils and thickens. Cool. Serve with grilled prawns, fish or chicken. Prep time: 15 minutes. |
| Firecracker Shrimp Makes 4 servings. 1/3 cup honey 1/4 cup soy sauce 1 Tbsp. rice wine vinegar 2 tsp. cornstarch 2 tsp. grated orange peel 1/4 tsp. crushed red pepper flakes, or to taste 1 Tbsp. vegetable oil 4 garlic cloves, minced 2 tsp. minced fresh ginger 1 red bell pepper, seeded and chopped 1 cup snow peas, cut into 1-inch pieces 1-1/2 lbs. shrimp, peeled and deveined 3 green onions, cut into 1-inch pieces 6 cups cooked white rice, optional directions In small bowl, whisk together honey, soy sauce, vinegar, cornstarch, orange peel and red pepper flakes until thoroughly mixed and cornstarch is dissolved. Set aside. Heat oil in wok or large, heavy skillet over medium-high heat. Stir in garlic and ginger; stir-fry until fragrant, about 1 minute. Add bell pepper and snow peas; stir-fry 1 minute until crisp-tender. Add shrimp and green onions; stir-fry until shrimp just turns pink, about 1 minute. Stir in reserved soy sauce mixture; cook and stir until sauce boils and thickens. Serve over cooked rice, if desired. |
| Honey Roasted Nuts Makes 3 cups. 3 cups nuts 1/2 cup honey 2 tbsp. butter or margarine 1/2 tsp. grated orange peel 1/2 tsp. ground cinnamon directions Combine all ingredients; mix well. Microwave at HIGH (100%) in 600 to 700 watt microwave oven 4 to 7 minutes or until nuts are toasted, stirring halfway through cooking time. Spread nuts on foil to cool.
