Orange Almond Honey Muffins
Makes 8 muffins.

1-1/4 cups
all-purpose flour
1 tsp.
baking powder
1 /2 tsp.
baking soda
1/4 tsp.
salt
1/4 cup (1/2 stick)
butter or margarine, softened
1/2 cup  honey 
1  egg
1/4 cup orange juice concentrate
1/2 tsp. grated orange peel
1/2 cup chopped toasted almonds

DIRECTIONS

In a small bowl, combine flour, baking powder, baking soda and salt; set aside. Using an electric mixer, beat butter and honey until light. Beat in egg, orange juice concentrate and orange peel. Gradually add flour mixture, mixing until just blended; stir in almonds. Spoon into 8 greased or paper-lined 2-1/2 -inch muffin cups. Bake at 350�F for 25 to 30 minutes, or until toothpick inserted in center comes out clean. Remove muffins from pan to wire rack. Serve warm or at room temperature.
Fruit Smoothie
Makes 4 servings.

pint fresh strawberries, stemmed and sliced
or 2 cups frozen strawberries, slightly thawed

cup 1% milk
1
cup (8 ounces) plain or vanilla low-fat yogurt
1/2
cup honey
1
teaspoon vanilla extract
1
cup crushed ice (5-6 cubes)

DIRECTIONS

In a blender or food processor container, combine all ingredients; process until smooth. Serve immediately. For variety, use 2 cups any fresh or frozen fruit or combination of fruits such as sliced strawberries and bananas or sliced peaches and whole raspberries.

Honey Raspberry Iced Tea
Makes 4 servings.

  
2 cups freshly brewed tea
2 cups cranberry-raspberry juice
1/4 cup honey

 
DIRECTIONS

In a large, heat-proof pitcher, whisk together all ingredients until thoroughly combined and honey is dissolved. Chill until ready to serve. To serve, pour over ice.
Honey Grog
Makes 8 servings.

4 cups apple cider, or apple juice 
1/4 cup honey
2 tablespoons butter or margarine
1  cinnamon stick, 3 inches long
1 teaspoon grated orange peel
1/4 teaspoon ground nutmeg
1/2 cup light rum, optional


DIRECTIONS

Combine all ingredients except rum in medium saucepan and bring to a simmer, stirring occasionally. Simmer 5 minutes. Stir in rum just before serving, if desired.

Honey Latte
Makes 1 serving.



1 tablespoon honey

1 tablespoon cocoa powder

1/4 cup espresso coffee, hot

3/4 cup steamed milk
