| Poor Man's Cake (servings 12) CHOCOLATE CAKE 3 cups flour 6 tablespoons cocoa 10 tablespoons shortening or bacon grease 2 teaspoons baking soda 1 teaspoon salt 2 cups water 2 teaspoons vanilla 2 cups sugar 2 tablespoons vinegar DIRECTIONS sift dry ingredients together, make hole in center of dry mix, put vinegar,shortening or bacon grease and water in and stir until mixed. can be mixed in ungreased cake pan or mixing bowl (easier in bowl) Bake at 350 degrees for 40 to 53 minutes. Yield:1 THIS RECIPE IS OVER 100 YEARS OLD IF YOU USE BACON GREASE NOBODY WILL BE ABLE TO TELL. |

| Fruit Cocktail Cake (servings:12) 2 cups flour 1 1/2 cups sugar 1 teaspoon baking soda 1/2 teaspoon salt 2 eggs 1- 303 size can fruit cocktail 1/4 cup brown sugar 1/4 cup pecans ---------------------- Icing 1 cup butter or margarine 3/4 cup sugar 3/4 cup evaporated milk 1 teaspoon vanilla 1/2 cup coconut DIRECTIONS Sift together flour, sugar, baking soda and salt To flour mixture add eggs and juice from fruit cocktail beat till blended. Add fruit cocktail and stir lightly. pour into 9x9x2 inch pan or larger. Before baking sprinkle 1/4 cup brown sugar and 1/4 cup pecans over top. Bake at 350 degrees for 40 to 45 minutes. Let cool. Punch top of cake full of holes with toothpick or fork to let icing seep thru cake. ICING. In a sauce pan combine 1 cup butter or margarine, 3/4 cup sugar, 3/4 cup evaporated milk. Boil for 4 to 5 minutes. Remove from heat and add 1 teaspoon vanilla and 1/2 cup coconut. stir and pour over top of cake. Yield: 1 |
| Glazed Doughnuts 1/4 cup shortening 1 package yeast 1 cup milk 1 teaspoon salt 1/4 cup sugar 1 egg 3 1/2 cups sifted flour DIRECTIONS Heat milk slightly and dissolve yeast Add 1 1/2 cups flour and beat until smooth. Cover and let rise in a warm place until double in size (about 2 hours). Cream shortening salt and sugar together; add eggs and blend . Stir this mixture into the yeast sponge, add remaining flour and beat well for about five minutes.Rub top with shortening and let rise again, until double in size (about 2 hrs.) Roll out 1/4 inch thick and cut with floured doughnut cutter. Allow to rise about 45 minutes, then fry in deep hot fat. |
