| saute: lots of pieces of chicken (1 lb-ish) 5 scallions, sliced juice from the minced garlic jar until the chickie just just cooked through add to the chickie and heat (large pot time): 1 can mild natural enchilada sauce (don't use the kinds with msg or preservatives---eww!) 1 can whole kernal corn & its juice 2 1/2 enchilada cans of water 1/2 cup chopped fresh cilantro when it's warm, add: 1/2 container of "better than cream cheese" stir until it's all melted in salt to taste (it will need some at least) pour over: corn tortilla chips and sprinkle with: cheese (soy/rice) and remember your mother loves you enough to make this a wheat, gluten, peanut, and dairy-free meal! awww... |
