Fresca Burger
| Caramelised onion | 1 whole slice of a large onion |

| Cheese | 1 slice cheddar or Red Leicester |
| Bacon | 2 streaky rashers |
| Burger Patty | 200g fresh ground beef |
| Salsa mix (3 serves) | 1 avocado cubed |
| 12 grape tomatoes quartered | |
| 2 spring onion stalks sliced | |
| 1 lime juiced | |
| Salad | Fresh baby spinach leaves |
| Sauce | Fresh aioli |
| Bun | Fresh brioche bun |
- Mix the avocado, spring onion, cherry tomatoes and lime juice to prepare salsa. Season with salt + pepper.
- Cook the whole onion slice intact on both sides so it starts to caramlise. leave aside to top the assembled burger.
- Spread aioli on bun halves.
- cook bacon rashers til they're slightly crispy.
- Cook burger until it is perfect. When flipped, put bacon on top, then cheese, then intact cooked onion slice.
- Put spinach leaves on bottom bun, then a spoonful of salsa. Assembled burger pattie goes on top of salsa.
