1 Onion, chopped
Oil for frying
2-3 tsp Thai Red Curry Paste
1 can of Coconut Milk
1/2-3/4  can of water
2 Medium Potatoes, chopped
1 Small Cauliflower, chopped
8 Baby Corn-on-Cobs, sliced lengthways
1-2 handfuls Fine Green Beans, halved
1 handful Kaffir Lime Leaves
2 tsp Green Peppercorns, cracked
2 handfuls Fresh Chopped Basil
1 dessert spoon Soft Brown Sugar
2 tbsp Thai Fish Sauce
Juice of 1 lime
Thai Fragrant Rice, steamed

Fry onion, till slightly softened, add curry paste. Cook for 2 mins. Add coconut milk and water, stir. Add veg and lime leaves. Simmer for 30 mins or until veg has softened. Add remaining ingredients, stir. Serve with rice.
