Small Cooked Chicken 1 Medium Onion, diced 2 Tbsp Patak's Madras Curry Paste 3/4 - 1 Pt Chicken Gravy, medium thick 8 Medium Sized Ripe Vine Tomatoes, roughly chopped 1 cup Sultanas Basmati Rice Oil
Remove meat from chicken and cut into bite-size pieces. Fry onion in oil till soft and then add cury paste. Cook, stirring, for a further 2 minutes. Add tomatoes, and sultanas. Cook gently, until tomatoes are melted and very soft. Add hot chicken gravy, stir well, cover and simmer gently for about an hour, until sultanas are plump. Stir in cooked chicken and heat through gently. Serve with basmati rice. |
