Ingredients (7 Servings):
Preparation : Boil Chicken in water for 20 minutes, while removing the foam. Add onion halves, tomato juice with cinnamon, black pepper, curcuma, khoulajan, saffron, a cinnamon stick, a sweet-bay leaf, and clove seeds. Cook on Low heat for 20 minutes, until chicken is tender, but not done. Remove from heat, season with the remaining spices. Transfer the chicken to a pan, rub with Butter and bake in oven at 120 degrees Celsius until red. Using 5 cups of chicken stock, bring the rice to a boil and allow to simmer for half an hour until the rice is done. Stir-fry onion wings with Butter/Ghee until Tender and toss the remaining spices as well as almonds, pine nuts, and dried grapes. Presentation: Serve the rice in a platter garnished with chicken chunks, onion sauce, as well as dried grapes, almonds and pine nuts.
