agar-agar/kanten - gelatin-like product made from a kind of seaweed called tengusa; it's available in various forms; the most common are bar and powder; helps clean the digestive tract




aburi - fried tofu




anmitsu - a type of fruit and jelly ice cream




azuki beans - sweet red beans used in desserts throughout Asia




daikon - large Japanese radish




dango - dumplings of mochi (a chewy dough made of rice flour)




deer senbei - biscuits for deer; Nara's parks are famous for deer that visitors can feed




dim sum - pork buns (Chinese dish)




edamame - green soybeans




gahan - rice/cooked meal




gyouza - dumpling





kabosu - a juicy green citrus fruit with the sharpness of lemon, used instead of vinegar in some Japanese dishes




kashiwa-mochi - mochi balls filled with azuki beans; rice cake wrapped in oak leaf




katsu - a thin slice of pork done up in a fried breading




Kusamochi - boiled leaves with mochi; sometimes with sweet bean paste in the center




kuzumochi - chewy cakes made from kozu [arrowroot] starch




maguro - tuna




manjuu - type of bean paste. For example, in a chicken-wing manjuu, it's a dish of bean paste stuffed in chicken wings [although this is usually not a very appetizing dish]




menma � fermented bamboo shoots




miso - Japanese soy-based soup




mochi - a Japanese dessert: rice dough (kinda marshmallow in texture) stuffed with ohagi (sweet bean paste); made of rice flour




monja-yaki - a pan-fried pancake of mixed vegetables and meat, similar to okonomiyaki, only without the eggs




moussaka - lasagna with fried eggplant slices instead of pasta




nagashi soumen - a type of noodle that is served in a bamboo flume; as the noodles flow down the flume, diners pick them out with chopsticks




naruto � steamed fish-paste cake sliced to decorate soup; white with a pink spiral in the middle




natto - fermented soybean paste; really sticky and smelly




nimono - stewed/boiled foods




niratama - a dish with leeks and egg




nishin soba - herring noodles




odango - balls of sweetened rice flour; Japanese sweet dumplings




oden - consists of several ingredients such as boiled eggs, daikon radish, konnyaku, and chikuwa cooked in konbu or katsuobushi based dashi broth. Mustard may be used as a condiment. In Nagoya, miso is used as a dipping sauce. In Kansai, it may be called Kanto ni or Kanto daki, both literally Kanto stew, because Oden originated in the Kanto area. It is usually served over rice.




ohagi - sweet bean paste; a rice cake covered with bean jam, soybean flour, or ground sesame




okonomiyaki - a vegetable griddlecake; meat or seafood in a vegetable pancake. The basic ingredients are cabbage, flour and eggs, and the rest depends on your okonomi, that is, "your taste". Shrimp and squid are popular additions, and when it's all done, you top it off with thick sauce, aonori and bonito flakes.

ramen - a popular noodle soup dish




ringo-ame - an apple on a stick dipped into liquid candy that hardens as it cools until it resembles lollipop candy; kind of like a caramel apple except with lollipop candy-coating




sashimi - raw fish; sushi can be raw fish or sometimes it has no raw fish; sushi is actually more talking about the vinegared rice so if you want to specifically mean "raw fish" its good to use "sashimi"




shiokara - salted fish guts




shougayaki - pork fried with ginger




shungiku - Chrysanthemum leaves




soba - buckwheat noodles (resembling spaghetti) served in a soy-flavored, or sometimes clear, broth made from fish and seaweed




soumen - noodles




sushi - mostly raw fish and rice wrapped in seaweed, with some exceptions




taiyaki - fish-shaped pancakes filled with azuki bean paste




takoyaki - dumplings made with bits of octopus meat




teriyaki - food covered in sweet soy sauce




tempura - batter-fried vegetables and seafood




tonkatsu - breaded pork cutlet




tonkoro ten � transparent noodles eaten together with black honey and vinegar




tororo soba - grated yam noodles




tsukemen � dipping noodles, the soup and noodles are served separately




ume konbu - plum and seaweed




umeboshi - the Japanese plum fruit; sour and seldom eaten raw




wagarashi - hot mustard; used as a dressing




wasabi - condiment for sushi, sashimi and chilled soba noodles




yaki-imo - baked sweet potatoes often sold by street vendors in Japan during autumn. Also often thought of as a sign of the season.




youkan � tasty chocolate treat




yosenabe � a soup consisting especially of seafood and veggies cooked in a broth




yude-takenoko - young shoots of the bamboo tree; used in soups, simmered dishes and mixed rice dishes
