Breads and Rolls
Herbed Parmesan Loaf
3 1/2 c. flour
1/3 c. parmesan cheese
1 T. sugar
1 tsp. salt
2 tsp. italian seasoning
1 pkg. rapid rise yeast
1 c. hot water
2 T. butter (soft)
2 eggs (room temperature)
1 T. cold water
additional parmesan cheese
Preheat oven to 400 degrees.

Set aside 1 cup of flour.  In a large bowl, mix flour, parmesan cheese, sugar, salt, seasoning and yeast.  Stir hot water and butter into dry mixture.  Mix in 1 egg and enough reserved flour to make soft dough.  On lightly floured surface, knead for 4 minutes.  Roll dough to 15x8 inch rectangle; roll up from long edge (like jellyroll).  Seal seams and ends.  Place seamside down on greased baking sheet.  Cover with plastic wrap, place over a 13x9 baking pan filled halfway with boiling water; let rise 20 minutes.  Cut lengthwise slash on top of loaf.  Beat remaining egg with cold water; brush on loaf.  Sprinkle with parmesan cheese.  Bake 20 minutes.
