Lamb Burger
Ingredients:
- 500g lamb mince
- 80ml (1/3 cup) spicy tomato relish
- 4 ciabatta olive rolls, halved, toasted
- 75g (1/4 cup) hummus
- 40g baby rocket leaves
- 100g fire-roasted peppers, drained, sliced
- 120g Persian feta, crumbled
Method
- Preheat a barbecue or chargrill on medium-high. Combine mince and relish in a bowl. Season well. Shape into four 2cm-thick patties.
- Cook patties for 4 minutes each side or until just cooked through. Rest for 2 minutes.
- Spread roll bases with hummus. Top with rocket, lamb, peppers and feta. Sandwich with roll tops.
