FARM MARKET APPLE CRISP

Another Apple Recipe.. hmmm.. Guess it's a *Fall* Thang with me!
But this is a healthy one :o)

5 cups of peeled Granny Smith apples
1 tablespoon margarine
1/2 tablespoon cinnamon
1/4 cup brown sugar
8 tablespoons of 2% milk
4 egg whites
1 teaspoon vanilla extract
1/2 cup all purpose flour
1/2 cup Quick Oatmeal
1 teaspoon baking powder
Preheat oven to 400 degrees.
Sauté apples with the
margarine until they become a little soft.
Sprinkle
them with cinnamon. Put aside.
In a bowl, whisk the milk, egg whites and vanilla
extract and set aside.
In another bowl, add the flour
oatmeal and baking powder.
Gradually add the
liquid and mix until all ingredients are incorporated.
Place the sautéed apples in a 9-inch non-stick
baking dish, and pour the batter over them.
Place in
a preheated 400-degree oven and bake for 35-40
minutes, until brown.
Cool and serve.
Serves 6.
PER SERVING:
182 calories and 2.9 grams fat

Harvest Pumpkin Bread

Sticking with the fall theme, here's a recipe for Harvest Pumpkin Bread
1-cup sugar
1/4 cup Margarine
1/4-cup applesauce
2 eggs
1-cup (8 ounces) solid pack pumpkin
2 cups all-purpose flour
1/2-teaspoon salt
2 teaspoons baking powder
1/4-teaspoon baking soda
1-teaspoon ground cinnamon
1/2-cup raisins
1 teaspoon grated orange rind
1/4 cup orange juice
1/2-cup walnuts, chopped
Lightly grease a 9x5x3 inch loaf pan or coat with vegetable spray.
Beat sugar, margarine, and applesauce until creamy and light (about 5
minutes).
Add eggs one at a time and continue to beat.
Add pumpkin and
mix until smooth.
Combine flour, salt, baking powder, baking soda, and
cinnamon.
Stir into pumpkin mixture and mix until smooth.
Add raisins,
orange rind, orange juice and nuts (optional).
Stir well and pour into
loaf pan.
Bake at 3500F for 60-65 minutes.
You can test for doneness
by sticking a wooden pick into loaf.
If it comes out clean, the bread
is done.
YIELD: 1 loaf, approx 12 Slices

Black Forest Pizza

I've been bad and haven't posted a recipe in a few weeks.
I apologise and hope it won't happen again :o) So here is a recipe for the sweet tooth.
1 package (19.8 ounces) brownie mix, batter prepared according to package directions
1 package (8 ounces) cream cheese, softened
2 tablespoons confectioners' sugar
1 container (8 ounces) frozen whipped topping, thawed
1 can (20 ounces) cherry pie filling
Preheat the oven to 350 degrees F.
Coat a 12-inch pizza pan with non-stick cooking spray.
Spread the prepared batter evenly over the bottom of the pan.
Bake for 20 to 25 minutes, or until a wooden toothpick inserted in the
centre comes out clean, let cool. In a large bowl, beat the cream cheese,
confectioners' sugar, and whipped topping until smooth.
With a wet table knife, spread the mixture evenly over the brownie pizza,
then spoon the cherry pie filling evenly over that.
Cut and serve immediately, or cover and chill until ready to serve.
Note: Just before serving, how 'bout topping each slice with an extra dollop of whipped topping?

APPLE BREAD PUDDING (CAPIROTADA)

Okay, I'll stick with the fall theme too!
One of our favourites for you today, Apple Bread Pudding...
no crockpot required, LOL! --->
8 tablespoons (1 stick) unsalted butter
1/2 loaf French bread or baguette, with crust, cut into small cubes
1 pound brown sugar
1 1/2 cups water
1 1/2 teaspoons ground cinnamon
2 large Granny Smith apples, peeled, cored and chopped
1 cup walnuts, chopped
1/2 pound cream cheese, chilled and chopped
Crema or heavy cream for garnish
Preheat the oven to 350 degrees.
Butter a 9 x 13 inch
glass casserole or lasagne pan.
Melt the butter in a medium saucepan, add the bread
cubes and stir to coat evenly.
Spread the cubes on a
baking sheet and bake 15 minutes or until lightly
brown and crisp.
Remove the bread and turn the oven
temperature up to 400 degrees.
Combine the sugar and water in a saucepan and bring to
a boil.
Remove from the heat. Stir in the cinnamon and
set aside.
In a large mixing bowl, combine the chopped apples,
walnuts, cream cheese and toasted bread cubes.
Drizzle
with the reserved sugar syrup and mix to evenly
distribute.
Transfer the mixture to the prepared pan.
Bake, uncovered, stirring occasionally, for 15
minutes.
Then bake an additional 5 minutes, without
stirring,
until the top is golden brown and crusty and
the liquid is almost gone.
Serve warm. Garnish as desired.
Yield: 8 servings

Taco Pasta Casserole

You may elect to vary the flavour of this recipe by utilising different
green peppers.
Although the bell pepper is the most common pepper used
in many recipes,
try a little roasted poblano or diced jalapeno pepper
to heat it up a little bit!
Serves 6 to 8
Ingredients:
1 lb. Lean Ground Beef
1 packet Taco Seasoning Mix
1 Tbs. Butter
1 Large Onion, chopped
1 large Green Pepper, chopped (optional)
1 large box Shell Pasta
2 cans Stewed Tomatoes
1 jar Chunky Salsa
2 cups Cheddar Cheese, grated
In a large skillet over medium heat, brown ground beef and drain
excess liquid.
Add taco seasoning spices as directed on the package,
blend, and reserve.
In the same skillet, sauté onions and peppers (if desired) in 1
tablespoon butter until tender.
Meanwhile, cook pasta as directed on the package and drain.
In a 9-inch by 13-inch baking pan, spoon stewed tomatoes into the
bottom of pan to cover.
Layer remaining ingredients in the following
order:
pasta, ground beef and taco seasoning, salsa, and cheese.
Repeat layering process until dish is full, making sure to finish the
top layer with cheddar cheese.
Bake in a pre-heated 400-F degree oven for 25 to 30 minutes.
Remove
from oven and let stand for about 5 minutes.
Serve warm.

Sloppy Joe Biscuit Cups

(Preparation/cooking time approx. 35 min)
Ingredients:
1 lb. lean ground beef
1/4 C. chopped celery
1/4 C. chopped onion
1/4 C. chopped green bell pepper
1/2 C. prepared barbecue sauce
1/4 tsp. salt
2-oz. can refrigerated flakey buttermilk biscuits
5 slices (1 oz. each) cheddar cheese, quartered
Directions:
Heat oven to 400 degrees.
In a large, nonstick skillet over medium heat, brown ground beef,
celery, onion, and bell pepper six minutes or until ourside surface of beef
is no longer pink, breaking beef up into 1/2-inch crumbles.
Pour off drippings.
Stir in barbecue sauce and salt.
Simmer, uncovered, two to three minutes; stir occasionally.
Meanwhile, place one biscuit into each of 10 ungreased standard-size muffin cups;
press dough firmly onto bottoms and up sides of cups.
Spoon about 1/4 cup of beef mixture into each biscuit cup.
Bake in oven 10 to 11 minutes or until edges of biscuits are golden brown.
Arrange two pieces of cheese on top of each biscuit cup.
Continue baking one to two minutes or until cheese is melted.
Let stand one minute.
Loosen edges of cups before removing from pan.
Makes 10 servings.
I made this for dinner tonight in between studying and running hubby to ER.
Came out pretty good. Kids loved it :)
