Tamale Pie
Posted by Lori

I found this recipe online somewhere and mailed it to myself a few years ago....
I just made it the other night, it was a big hit with everyone, very filling.
My suggestion is to use a BIG GLASS bowl or casserole dish,
I used tupperware and had to transfer it to a baking dish and made myself a bigger mess to clean.
And maybe add some salsa, onions, zip it up a little.
Ingredients
2 cans of tamales
1 can of pitted whole olives
1 bag of frozen corn
1/2 cup sour cream
1 1/2 cups cheddar cheese (colby is the best)
2 tablespoons corn meal
Directions
Preheat oven to 375 degrees.
In a large bowl, pour out contents (juice and tamales) of tamale cans and
unwrap the tamales. Cut into 1/2 inch slices.
Drain olives, put in bowl.
Pour whole bag of frozen corn into bowl.
Add 2 tablespoons of corn meal.
Mix gently. (you want the tamales to mix, but also you still want some to be whole chunks)
cut 1 cup of cheese into little cubes. (about 1/4 inch thick).
Fold into pie mixture. Place bowl in microwave on high for 8 minutes.
Then spread 1/2 cup sour cream over top layer, and sprinkle 1/2 cup shredded cheese on top.
Bake at 375 for about 4 minutes (whenever cheese is melted on top).
Serving Suggestions
This serves about four healthy portions.
I usually buy a Jiffy cornbread mix and use two tablespoons
of the dry mix in place of the 2 tbls of "corn meal",
and then prepare the remaining cornbread mix as directed on the box...
it always turns out perfect that way.

Okay! You gals know I'm not so big on cooking..
sooo how's about a poem??? :o)
Posted by Maggie

Well.. you after you gals are alllllll done messing up the kitchen from cookin..
you can say this poem

Thank God for dirty dishes
they have a tale to tell,
While other folks go hungry
we're eating very well.
With home and health
and happiness
We shouldn't want to fuss
For by this stack of evidence
God's very good to us!
(I have this poem right by my kitchen sink to help me remember
NOT to complain about doing dishes! and ya know what??
for the past 26 years it's really made a difference!)
