Chocolate Orange Spiderweb Pie

1-1/2 cups Milk 375 mL
1/2 cup 18% Cream 125 mL
2 tbsp Grated orange rind 25 mL
1/4 cup Granulated sugar 50 mL
2 Eggs 2
1/4 cup Cornstarch 50 mL
6 oz White chocolate, chopped 175 g
2 tbsp Butter 25 mL
1 tsp Vanilla 5 mL
1 oz Semisweet chocolate 30 g
2 tbsp Orange-coloured sugar 25 mL
CRUST:
1/3 cup Butter, melted 75 mL
1 tbsp Granulated sugar 15 mL
1-1/2 cups Chocolate wafer cookie crumbs 375 mL
CRUST:
Stir butter with sugar; stir into crumbs until moistened.
Press into 9-inch (23 cm) tart pan with removable bottom.
Bake in centre of 325ºF (160ºC) oven for 20 to 25 minutes or until firm.
Let cool on rack.
In heavy saucepan, heat 1 cup (250 mL) of the milk, cream and orange rind
over medium heat until bubbles form around edge.
In large bowl, whisk together remaining milk, sugar, eggs and cornstarch;
whisk in hot milk mixture to thicken slightly.
Return to pan; bring to boil over medium-high heat, whisking constantly.
Boil, stirring gently with wooden spoon, for 2 minutes or until thick enough to mound on spoon.
Strain through sieve into large bowl.
Stir in white chocolate, butter and vanilla until smooth.
Transfer 2 tbsp (25 mL) to small bowl.
Pour remaining custard into crust, smoothing top.
Melt semisweet chocolate; stir into reserved custard.
Using piping bag, pipe in spiral pattern over filling.
From centre to rim, pull knife through chocolate at even intervals.
Refrigerate for 6 hours or until set.
(Make-ahead: Cover and refrigerate for up to 24 hours.)
Top with Chocolate Spiders (if using).
Sprinkle coloured sugar around edge.
Makes 8 servings.

KITTY LITTER CAKE

Here's a fun Halloween recipe for you!
It looks kinda gross, but kids love it!
(Heck I love it too, it's yummy!)
You just have to get past the way it looks! ROFL!!!

1 (18.25 ounce) package German chocolate cake mix
1 (18.25 ounce) package white cake mix
2 (3.5 ounce) packages instant vanilla pudding mix
1 (12 ounce) package vanilla sandwich cookies
3 drops green food coloring
1 (12 ounce) package tootsie rolls
Prepare cake mixes and bake according to package directions (any size pan works).
Prepare pudding according to package directions and chill until ready to assemble.
Crumble sandwich cookies in small batches in a food processor, scraping often.
Set aside all but 1/4 cup.
To the 1/4 cup add a few drops of green food coloring and mix.
When cakes are cooled to room temperature, crumble them into a large bowl.
Toss with 1/2 of the remaining cookie crumbs, and the chilled pudding.
You probably won't need all of the pudding, you want the cake to be just moist, not soggy.
Line kitty litter box with the kitty litter liner. Put cake mixture into box.
Put half of the unwrapped tootsie rolls in a microwave safe dish and heat until softened.
Shape the ends so that they are no longer blunt, and curve the tootsie rolls slightly.
Bury tootsie rolls randomly in the cake and sprinkle with half of the remaining cookie crumbs.
Sprinkle a small amount of the green colored cookie crumbs lightly over the top.
Heat 3 or 4 of the tootsie rolls in the microwave until almost melted.
Scrape them on top of the cake and sprinkle lightly with some of the green cookie crumbs.
Heat the remaining tootsie rolls until pliable and shape as before.
Spread all but one randomly over top of cake mixture.
Sprinkle with any remaining cookie crumbs.
Hang the remaining tootsie roll over side of litter box and sprinkle with a few green cookie crumbs.
Serve with the pooper scooper for a gross Halloween dessert.
I'm telling you, it gets the biggest bunch of laughs!
It's really fun to serve this, and it really is delicious!

Lunch recipe Caesar salad sandwich

Prep: 15 min, Cook: 10 min.
4 medium hard rolls, preferably whole grain
2 cups Romaine lettuce, torn
1/3 cup fat-free Caesar salad dressing
3-1/2 Tbs. grated Parmesan cheese
1 lb. chicken breasts, cut into 3 inch long strips
1-1/4 tsp. olive oil
Set the oven on broil.
Cut each roll in half and scoop out the dough to form a pocket in one side of the bread.
Combine the lettuce, dressing and cheese in a bowl.
Place the chicken strips on a broiler pan and brush with the olive oil.
Broil the strips of chicken for a total of about 7 minutes, turning once.
Add the chicken to the salad and pile the mixture into the bread pocket.
Top with the other half of bread and serve.
Per serving: calories 333, fat 6.5g, 18% calories from fat, cholesterol 69mg, protein 34.0g,
carbohydrates 32.2g, fibre 1.8g, sugar 4.5g, sodium 654mg, diet points 7.4.

Crock Pot Apple Pudding

Coming from somebody who detests cooking
(not FOOD, mind you!) just the cooking of it :o)
ohhh and shopping for it..
and cleaning up after it..
and well... here's a good one!
2 cups sugar
1 cup oil
2 eggs
2 t. vanilla
2 cups flour
1 t. baking soda
1 t. nutmeg or cinnamon
2 cups unpeeled apple, finely chopped
1 cup chopped nuts
Beat sugar, oil, eggs and vanilla.
Add apple with dry ingredients and mix well.
Spray a 2-pound coffee can with cooking spray, or grease and flour it well.
Pour batter into can filling no more than 2/3 full.
Place can in crock pot.
Do not add water.
Cover, but leave cover ajar so steam can escape.
Cook on high 3-1/2 to 4 hours.
Don't peek before last hour of baking.
When top is set, turn off crock pot.
Let stand in can for a few minutes before tipping out onto a plate.
Serve half-rounds plain, with whipped cream or a pudding sauce.
- or top with this sauce

Warm Cider Sauce
1 cup apple cider
3/4 cup light corn syrup
1/4 cup sugar
1/4 cup butter
juice and grated rind of one lemon
1/2 t. nutmeg or cinnamon
pinch of ginger
Heat all ingredients together until sugar dissolves.
Serve warm on top of apple cake,
vanilla ice cream, pumpkin pie, or apple dumplings.

Pumpkin Stew

Make your favourite stew....
Take a pumpkin and clean it out...
pour your hot stew into it... put it in oven at 350..
bake until pumpkin is cooked....
put on a serving platter and place on table...
serve and enjoy!!
