| Spare Ribs 2# ribs (floured and fried) 3/4 c. water 3/4 c. brown sugar 1/4 c. vinegar 3 T. shoyu 1 tsp. ginger, minced 1/2 tsp. garlic, minced 1 tsp. salt Combine and add to browned ribs...cover partially and simmer, simmer, simmer on low heat. |
| Chicken and Lima Beans chicken drummettes, or chopped skinless breasts lima beans, shelled, rinsed 5 or 6 ebi, soaked in 1/2 c. water 2 T. sugar dash of mirin 1/4 c. shoyu 1/4 tsp. salt Fry chicken in oil. Add lima beans and ebi. Add sugar, mirin, shoyu and salt. Simmer. Cover at beginning of cooking, then uncover at end of cooking. Sauce will be brown in color. |

| Katsu (pork or chicken) 1# lean pork or boneless chicken thighs Coat meat of choice in flour, with salt and pepper added. Dip in a bowl of beaten eggs. Then dredge in panko (bread crumbs) Deep fry will crown on outside. If still pink on inside, microwave for 1 minute. Enjoy with katsu sauce (worchestershire sauce and Heinz ketchup) |
