Fruit Pizza

crust:
3/4 c. margarine, softened
1/2 c. confectioners sugar
1 1/2 c. flour
HEAT oven to 300-degrees.  Beat butter and confectioner's sugar until light and fluffy; bklend in flour.  Press onto bottom and upsides of a pizza pan.  Bake 20-25 minutes or til lightly browned.  Cool completely.

vanilla filling:
1 2/3 c. white chocolate chips
1/4 c. whipping cream
1 8oz. pkg cream cheese, softened
IN microwave-safe bwol, melt white chocolates and cream on high at 1 to 1-1/2 until mix is smooth when stirred.  Beat in cream cheese.

fruit topping:
1/4 c. sugar
1 T cornstarch
1/2 c. pineapple juice
1/2 tsp. lemon juice
IN small saucepan combine sugar and cornstarch; stir in juices.  Cook over medium heat; stirring constantly until thickened; cool. 

assorted fruit (kiwi, strawberry, blueberry, grape, etc.)
MEANWHILE, slice and arrange fruit on top of filling; pour juice mixture over fruit.

it's a bit of a hassle to make, but it's worth the work.

Energy Bars

1/2 c. butter
4 c. mini marshmallows
1 c. raisins
1 c. dry roasted peanuts
2 c. oats
4 c. rice krispies, reserve 1 c. for topping
1/2 c. chocolate chips, optional *

Melt butter and marshmallows in a big pot over low heat till melted through.  Add remaining ingredients.  Put in 9x13 pan lined with plastic wrap.  Top with reserved krispies.  Place nother plastic wrap over and smash down to approximately 1-inch depth.  Cool and cut. 

* if using chocolate chips, add just before removing from heat or it will melt.  
Covered Pretzels

2 1/2 c. rice krispies
11 oz. bag 50% less salt buttered pretzel sticks
1# white chocolate
1 can macadamia nuts, diced
baking cups

Combine dry ingredients; set aside.  Melt chocolate in microwave 1 minute (cover with damp towel for moisture).  Stir, cook 1 minute more.  DO NOT OVERCOOK.  Pour over dry ingredients and mix till all is coated.  Spoon into baking cups.  Will harden in 10 minutes.  Store in air tight container.
