Cappuccino Mix
Recipe by Pauline Labor
1 cup non-dairy creamer
1 cup instant chocolate drink mix
2/3/cup instant coffee granules
1/2 cup sugar
1/2 teasp. ground cinnamon
1/4 teasp. ground nutmeg

Combine all ingredients. Mix well. Store in airtight container. To serve, add 3 tbsp. mix to 3/4 cup boiling water, stir. Makes 16 servings or 3 cups mix.





Fudge Nut Bars

  • 6 ounces chocolate chips
  • 1/2 cup sweetened condensed milk -- (nonfat works well)
  • 1 tablespoon butter
  • 1/4 teaspoon salt
  • 1/2 cup walnuts -- chopped
  • 1 teaspoon vanilla

DOUGH:

  • 1 1/4 cups flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup butter
  • 1 cup brown sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1 1/2 cups oatmeal
  • 1/4 cup walnuts -- chopped
  1. For filling, combine chocolate chips, sweetened condensed milk, butter and salt. Microwave on High until melted. Add walnuts and vanilla. Set aside.
  2. Mix flour, soda and salt. Cream butter. Gradually add sugar. Add egg and vanilla. blend well. Stir in flour mixture and oatmeal.
  3. Press 2/3 of dough in greased 9" square pan. Spread with filling. Crumble remaining mixture over filling. Sprinkle with chopped walnuts. Bake at 350� for 25-30 minutes, until lightly browned. Cool and cut into bars.

NOTES : To make a 10"x15" pan, double the recipe.





Brownie Trifle

Serves: 16-18

  • 1 (19.8 oz.) pkg. fudge brownie mix
  • 1 (3.9 oz.) pkg. chocolate fudge instant pudding mix
  • 1 (6 oz.) pkg. milk chocolate toffee chips
  • 1 (12 oz.) container frozen whipped topping, thawed
  1. Prepare brownie mix according to package directions in a 9"x 13" pan. Cool. Crumble or cut into small pieces.
  2. Prepare chocolate pudding according to package directions, omitting the chilling procedure.
  3. Place half of crumbled brownies in the bottom of a 3 quart trifle bowl. Top with half each of the pudding, chips and whipped topping. Repeat. Cover. Chill at least 8 hours. Garnish with mint and semi sweet chocolate curls. (Soften 1 ounce of chocolate 10-15 seconds at 30% power in microwave. Shave off curls with vegetable peeler.)





Banana Split Dessert

In a 9"x 13" pan, melt one stick of oleo or butter. While it's melting, crush 2 cups of vanilla wafers. Mix with oleo or butter and press into bottom of pan. (Stella uses slightly more vanilla wafers). Slice 3-4 bananas on top of cookie crumbs. Mix 1 can of sweetened condensed milk and 1/4 cup of lemon juice, spread on top of bananas. Cover with one 8 oz. of Cool Whip, then cover with 1 large can of drained pineapple. Sprinkle with coconut and crushed nuts. Top with cherries. Make early in the day or let sit overnight. Serve chilled.





Pumpkin Pie Squares

  • 1 cup flour
  • � cup brown sugar
  • � cup quick cooking oats
  • � cup butter
Combine until crumbly; sprinkle into greased 9 x 13 pan, and press down. Bake at 350 for 15 minutes.


  • 2 cups pumpkin
  • � cup sugar
  • 13 oz. can evaporated milk
  • 2 eggs
  • � tsp. salt
  • � tsp. ground ginger
  • 1 tsp. ground cinnamon
  • � tsp. ground cloves
Combine and pour into baked crust. Bake ate 350 for 20 minutes.


  • � cup chopped pecans
  • � cup brown sugar
  • 2 TB butter
Combine and sprinkle over pumpkin filling. Bake 15-20 minutes or until set. Cool in pan.
Serve with whipped cream.

Once I melted the butter to mix with the brown sugar and pecans. Bad idea�the topping sank to the bottom.
I had these squares in October of 1981 when I was speaking at Hope Lutheran Church in La Grange, Illinois. The lady who made the dessert was Norma Pollock. It always seems fitting to pass along the name with a good dessert! Enjoy.





Chocolate Chip Pie

  • 2 eggs
  • 1/2 cup flour
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1 cup butter -- melted and cooled
  • 1 cup chocolate chips
  • 1 cup walnuts -- chopped
  • 1 pie crust (9 inch) -- unbaked

Preheat oven to 325�. In large bowl, beat eggs until foamy. Add flour, sugars; beat until well blended. Blend in melted butter. Stir in chocolate chips and nuts. Pour into pie shell. Bake 1 hour. Recipe may be doubled, bake two, freeze one.





Cabbage-Spinach Salad

Use equal parts of shredded cabbage and spinach 1/2 to 1 cup walnuts, 1 pkg of craisins(dried craberries/raisins)


Dressing

In a blender or shaker bottle: 2/3 cup sugar (I use less than 1/2 cup), 2 tsp dry mustard, 2 tsp celery seed, 1/2 cup grated onion, 1 tsp salt, 1 cup oil, 2/3 cup cider vinegar(I use balsomic vinegar).





Peanut Sitting Pretties

  • 1 cup butter
  • 1/2 cup brown sugar
  • 2 eggs -- separated
  • 1 teaspoon vanilla
  • 2 cups flour
  • 1/2 teaspoon salt
  • nuts -- finely chopped
  • creamy vanilla frosting
  • M&Ms� with peanuts chocolate candy
  1. Blend butter and sugar; stir in egg yolks and vanilla. Stir in flour and salt, mix well. Chill 1 hour. Roll into 1" balls.
  2. Dip into slightly beaten egg white. Roll in nuts. Place 1" apart on cookie sheet.
  3. Bake at 350� 5 minutes. Press thumb gently in center of each; bake 5 minutes longer. Cool.
  4. Fill with frosting. Garnish with an M&M sitting in the middle of the frosting. Makes about 4 dozen.
