Start of your meal
with a hot towel to clean your hands as it is preferable to eat sushi with
ones hand rather than with chopsticks.

There is no set order in which the various kinds of sushi is eaten, but
the nori-wrapped pieces should be eaten first, since the crispness of nori
seaweed does not last long once it comes in contact with the damp rice.

Always place the sushi in the mouth so that the topping encounters the
tongue first. Eat the whole thing at once and all food should be finished,
as it is an insult to leave food on your plate.

With your Sushi order, you will be served a portion of pickled ginger,
Wasabi and Soya sauce. The ginger is to be eaten between different varieties
of sushi and acts as a palette cleanser in preparation for the next enjoyable
taste sensation. The Wasabi is to be mixed in with the Soya sauce depending
on how "spicy" one likes it.

And try not to dip the rice portion of the sushi pieces into the Soya
sauce as it becomes too moist and cause sushi to fall apart. Simply dip the
topping or the seaweed (Nori) in the soya sauce before eating.

Saké is served warm, and before you eat - not while and not after.
The tea on the other hand is served during the whole meal. Green tea is
essential for the full enjoyment of sushi, it removes aftertastes and leaves
the mouth fresh for the next serving.
