SUSHI VOCABULARY

Sushi a la carte

aburage --- fried tofu pouches prepared by cooking in sweet cooking sake, shoyu and water
akagai --- ark shell, red in color
ama-ebi --- raw sweet shrimp
anago --- salt water eel or conger eel, pre-cooked (boiled) and then grilled before serving
ebi --- boiled shrimp
hamo --- sea eel
hatahata --- sandfish
hotategai --- scallop
ika --- squid, only the body is used and it is eaten raw
ikura --- salmon roe
kani --- crab
kazunoko --- herring roe
kaki --- oysters
kuruma-ebi --- prawn
maguro --- tuna
masu --- trout
nori-tama --- sweetened egg wrapped in dried seaweed
saba --- mackerel
sake --- salmon, usually cured in salt and sugar before serving
sashimi --- raw fish fillets sans the sushi rice
shiromi --- seasonal "white meat" fish
tako --- octopus, the cooked tentacles are usually used for sushi
tamago --- sweet egg custard
torigai --- cockle
unagi --- eel (freshwater) - grilled, and brushed with a teriyaki-like sauce
uni --- sea urchin, the sexual organs (gonads) of the sea urchin

Maki-sushi (sushi rolls)
futo-maki --- a fat roll filled with rice, sweetened cooked egg, pickled gourd, and bits of vegetables
kappa-maki --- cucumber-filled maki-sushi
maguro-temaki --- tuna temaki
maki-mono --- vinegared rice and fish (or other ingredients) rolled in nori seaweed
nori-maki --- same as kanpyo-maki; in Osaka, same as futo-maki
tekka-maki --- tuna-filled maki-sushi
tekkappa-maki --- selection of both tuna and cucumber rolls
temaki --- hand-rolled cones made from dried seaweed

Other sushi terms
California Roll --- Imitation crab meat, avocado, carrot, cucumber,
chakin-sushi --- vinegared rice wrapped in a thin egg crepe
chirashi(-sushi) --- "scattered sushi", box of sushi rice topped with a variety of sashimi.
gari --- vinegared ginger
inari-sushi --- vinegared rice and vegetables wrapped in a bag of fried tofu
neta --- sushi topping
nigiri(-sushi) --- pieces of raw fish over vinegared rice balls
oshi-sushi --- Osaka-style sushi: squares of pressed rice topped with vinegared/cooked fish
oshinko --- Japanese pickles
sake --- rice wine. Served both hot and cold
sashimi --- raw fish (without rice)
shoyu --- soy sauce
tekka-don --- pieces of raw tuna over rice
wasabi --- Japanese horseradish
