Stuffed Chicken
Preheat oven to highest temperature.

Wash bird with cold water. Set in a bowl and sprinkle with the olive oil and spices. Rub the oil and spices into the chicken, coating it well on all sides.

Stuff with the stuffing while still in the bowl. Place in chicken roaster or big casserole dish *on it's back, breast side up*.

Wash and add fresh vegetables of choice. Salt & pepper them slightly. Bake in the oven until the chicken is golden browned. Turn over carefully and bake until back side is nicely browned.

Take out of the oven and let rest for 5 minutes. Carve & serve.

Giggi's Bread & Crouton Stuffing
2 T olive oil
1 T rosemary ( chopped )
1 t paprika
1/4 t salt
1/4 t pepper
