| Giggi's Bread & Crouton Stuffing |

| 2 C spiced croutons 4 slices bread ( cubed without crust ) 3/4 C celery ( chopped small ) 2 small green onions ( chopped ) 2 T olive oil 1 medium onion ( chopped ) 1/2 C mushroom pieces 2 t fresh thyme ( 1 t dry ) 1 t fresh sage ( 1/2 t dry ) 3/4 C water 1/2 t powdered chicken soup 1 t powdered mushroom soup 1/4 t black pepper |
| In small frying pan heat olive oil and add chopped ( regular ) oinion, mushrooms, thyme and sage. Saute until oinion is nicely browned but not burnt. Mix powdered soups in 3/4 C water and add pepper. Stir and add to sauted mixture. Stir together well. Cool slightly. In a mixing bowl, toss croutons, bread crumbs, celery and green onions. Add the sauted mixture to the crumbs and mix well. Stuff bird and bake. Enough for 1 chicken. NOTE: Double this amount for small turkey. I personally love raisins in this. If desired add 1/4 C small raisins to mixture. Thank you dear sister, for your wonderful recipe! |
