Wishy Ribs
get some boneless (lil fat as possible) pork country style ribs..... placethem in a baking pan or glass baking dish... take a lil over a 1/4 cup of melted butter... put it in a mixing bowl of some sorts. and add brown sugar til its thick..... enough to cover the ribs all around.. if you use too much butter it will taste yucky so make sure its a thick mixture... more brn sugar then anything... and after you coat them put tin foil over the top and bake them SLOWLY for a couple hours at about 300.... during the time that their cooking you can always coat them with more brown sugar if you like,, add that to your taste... and when there done they will melt in your mouth..... |

Flambeed Fillet of Beef
4 good sized fillet steaks 6 TBSP creamy gorgonzola cheese (or a strong tasting creamy cheese) 3 TBSP butter salt 2 TBSP of finely chopped shallots (small onions) freshly ground black pepper 2 fl oz Brandy 5 fl oz red wine 1 TBSP soya sauce 7 fl oz of double cream (heavy cream)
cut a pocket into the side of each fillet steak and fill with a tbsp of gorgonzola then secure with a cocktail stick
melt 2 tbsp of butter in a frying pan and fry the fillets for 4 to 6 mins on each side depending on whether you like them rare or well done. season with salt and pepper. add the chopped onions just before the fillets are cooked and fry for a few minutes without allowing them to brown. gently heat the brandy then pour over the beef and set alight. shake the pan to kill the flames and remove the fillets. on a high heat pour the wine into the same frying pan along with the soya sauce and allow it to reduce a little. add the cream and the remaining gorgonzola to the pan and stir constantly. add the remaining butter and continue to stir. put the fillets into a casserole dish and pour the sauce over the steaks. then sit back, enjoy and listen to your arteries fur up. |
