Cheesecake a l'orange
Crust: 1 cup sifted flour 1/4 cup sugar 1 tblspn grated orange rind 1/2 cup butter 1 egg yolk 1/2 tspn vanilla
1. Combine flour, sugar and orange rind. Cut in butter with a pastry blender until the mixture resembles coarse meal. 2. Blend in the egg yolk and vanilla thoroughly. 3. Pat 1/3 of the dough evenly over the bottom of 10 inch spring form pan. Bake at 400 F for 5 minutes and cool. 4. Pat remaining dough evenly around the sides to 1/2 inch from the top. Set aside and prepare filling.
Filling: 5 8-ounce packages cream cheese, softened 1 3/4 cups sugar 3 tbls flour 1 tbls grated orange rind 1/4 tsp salt 1/4 tsp vanilla 5 eggs 2 egg yolks 1/4 orange juice concentrate, thawed fresh orange sections and mint for garnish
1. Combine first 6 ingredients in large mixing bowl. Beat at low speed with electric beater until smooth. 2. Add eggs and egg yolks one at a time, beating well after each addition. 3. Stir in orange juice. Pour filling in to prepared crust. 4. Place fill spring form pan on a cookie sheet and bake at 400 F for 8 to 10 minutes. Reduce heat to 225 F and bake an addition 1 hour and 20 minutes. 5. Cool to room temperature then refridgerate to chill. 6. Garnish with orange sections and mint. |
