Mom�s Carrot Cake

Sift together:
  2 cups flour
  2 tsp. Baking powder
  1 � tsp. Soda
  2 tsp. Cinnamon
  1 tsp. Salt
(set this mixture aside)

Mix:
  1 � cups oil
  2 cups sugar
Add 4 eggs, one at a time and beat after each addition. 

Add the dry ingredients, and mix well. Add 2 cups grated carrots, and 1 small can of crushed pineapples (drained).  � cup chopped pecans and blend well.

Makes 3 layers.

Bake at 350 degrees for 35 to 40 minutes.  Enjoy!

No Bake Cheesecake

Ingredients:

Filling:
250 grms Philadelphia Cream Cheese
� cup Castor Sugar
2 teaspoons Gelatine
� cup hot Water
1 cup thickened Cream

Base:
1 � cups Plain Biscuit Crumbs
90 grams Butter

Method:

Base: Melt butter and combine with biscuit crumbs. Press into a springform cake tin. Refrigerate.

Filling: Beat the cheese and sugar until light and fluffy. Soften the gelatine in water. Cool slightly and beat into cream mixture. Whip cream and fold in

Gently until blended. Pour onto base and chill. Decorate.

Decoration: I use Mandarine segments that have been marinated in Grand Marnier. I also replace the water with Grand Marnier.
