Separatist Conference
There were a few changes and cuts made to the meeting of the Seperatists. Passel Argente of the Corparate Alliance was deleted along with his one line of dialogue in which he agreed to sign Dooku's treaty. He can still be seen walking with Dooku and the other Separatists while Obi-Wan evesdrops, and later in the Geonosis war room.
Toonbuck Toora's presence was also deleted and her alliegence was changed from Separatist to Loyalist Commitee. She can be seen on the balchony behind Palpatine watching the Clone Army disembark at the end of the movie. George Lucas was not satisfied with the Toonbuck Toora custume so ILM digitally changed her into another character. The new alligator like creature sitting at the table was originally Toonbuck Toora.
Lastly, Dooku explaining the benefits of joining his cause was trimmed and Shu Mai and San Hill's dialogue as written in the script was slightly altered.
Below is the excerpt from the "Art of Episode II" script with the blue text representing the things that were deleted or changed.
Scene 115 - INTERIOR GEONOSIS, CONFERENCE ROOM - DAY
POGGLE THE LESSER and his TWO AIDES are at one end of a large round conference table.
COUNT DOOKU
Now is the time, my friends. This is the moment when you have to decide
between the Republic or the Confederacy of Independent Systems.
COUNT DOOKU is at the head of the table. JANGO FETT stands behind his chair.
In addition to the original group, there are also THREE OPPOSITION SENATORS: PO NUDO, TESSEK and TOONBUCK TOORA, and a COMMERCE GUILD DIGNITARY, SHU MAI and a MEMBER
of the INTERGALACTIC BANK CLAN, SAN HILL.

When their Battle Droids are combined with yours, we shall have an army greater than anything in the galaxy. The Jedi will be overwhelmed. The Republic will agree to any demands we make.
