Rumble in the Rain
Obi-Wan versus Jango Fett in the rain, my favorite fight in AOTC. Unfortunantly, it too was trimmed down a bit for whatever reasons. Thanks to the leaked storyboards and the Making of Episode II Documentaries, the stunts that were cut are described below.

First Edit:
Obi-Wan blocking more shots as he approaches Jango. (A portion of this footage can be seen in the Clone War Trailer.) This is the one cut which I find a bit odd. With this part missing it seems as if Obi-Wan teleports from the landing pad doorway to standing near Jango. Curious. At least we know this sequence had completed FX.

I made a movie with this omitted footage from the trailer and a small snippet from the Episode II Animatics Reel edited back in to see how it would look. Download it Here. (1 mb .zip file)

Second Edit:
Obi-Wan blocking more shots from Jango as he flies around. (This footage can be seen in Making of Episode II #10 "Good to G.O.") It looks like some of this unused footage of Obi-Wan was used to make the rain battle "Options Menu" on the DVD.

Third Edit:
Obi-Wan and Jango grapple over the gun...

Third Edit Continued:
Obi-Wan elbows Jango in the head...

Third Edit Continued:
Obi-Wan then flips Jango over his shoulder. (This footage can be seen in Making of Episode II #10 "Good to G.O" and Making of Episode III #11 "Becoming Obi-Wan" as well.)

Forth Edit:
Jango fires with his arm mounted blaster but Obi-Wan jumps over the blast and onto Jango's shoulders, pummeling him, then flicks himself back and over, flipping Jango over onto his back. This is depicted in Select #24. (The filming of this stunt can also be seen in Making of Episode II #9 "Buckethead".)

Fifth Edit:
Jango moves in to attack, chopping at Obi-Wan's head, who blocks it. Jango ducks a swing from Obi-Wan and grabs him round the midriff.

Fifth Edit Continued:
Jango sweeps Obi-Wan bodily off his feet and flips him over, bringing him down over his bent knee hard. Jango spins and throws Obi-Wan skidding along the wet surface.

This sequence seems as though it was replaced with Obi-Wan punching Jango in the gut and then Jango countering with a headbutt.

Aside from those five cuts the rest of the fight follows the storyboards very closely. Judging from the trailers, making of footage, and other pics, it's a safe bet that the majority of the fight as depicted in the storyboards was filmed. Whether or not the deleted portions (with the exception of Edit 1) had effects work finished is another question.
