Pork Loin Roast with Herbed Pepper Rub

Another recipe in my "Convert Ian to Pork" campaign.  I bought pork roasts on a two for one special at Safeway, and this was so good, I did it on both roasts.
 

INGREDIENTS
 

Pork loin roast (3 lb)   1  
Parmesan cheese (grated)   2 Tbsp  
Dried rosemary   2 tsp  
Garlic powder   1/4 Tsp  
Cracked black pepper   2 Tbsp  
Dried basil   2 tsp  
Dried thyme   2 tsp  
Salt   1/4 tsp  

 

METHOD

  • Pat pork dry with paper towel.

  • In small bowl, combine all rub ingredients will and apply to all surfaces of the pork roast.

  • Place roast in a shallow pan and roast in a 350 degree oven for 1 - 1 1/4 hours (18-20 minutes per pound), until internal temperature, measured with a meat thermometer, registers 155 degrees F.

  • Remove from oven and let rest for 5-10 minutes before slicing to serve.

  • Serves 6-8, with leftovers.

 

NOTES

  • Go and buy a meat thermometer if you don't already have one.  I shied away from roasts, especially pork, because I was always scared of over or under cooking.  Now I know for sure when a roast is cooked exactly the way I want it.
