with Herbed Pepper Rub

Another recipe in my "Convert Ian to
Pork" campaign. I bought pork roasts on a two for one special at
Safeway, and this was so good, I did it on both roasts.
INGREDIENTS
| Pork loin roast (3 lb) | 1 | ||
| Parmesan cheese (grated) | 2 Tbsp | ||
| Dried rosemary | 2 tsp | ||
| Garlic powder | 1/4 Tsp | ||
| Cracked black pepper | 2 Tbsp | ||
| Dried basil | 2 tsp | ||
| Dried thyme | 2 tsp | ||
| Salt | 1/4 tsp |
METHOD
Pat pork dry with paper towel.
In small bowl, combine all rub ingredients will and apply to all surfaces of the pork roast.
Place roast in a shallow pan and roast in a 350 degree oven for 1 - 1 1/4 hours (18-20 minutes per pound), until internal temperature, measured with a meat thermometer, registers 155 degrees F.
Remove from oven and let rest for 5-10 minutes before slicing to serve.
Serves 6-8, with leftovers.
NOTES
Go and buy a meat thermometer if you don't already have one. I shied away from roasts, especially pork, because I was always scared of over or under cooking. Now I know for sure when a roast is cooked exactly the way I want it.
