vanilla custard
from the queen of pies - esther newbery

ian's mom makes the most scrumptious pies.  she uses this for the custard in her fresh fruit ones.  it's so yummy

 

INGREDIENTS
 

eggs   4  
corn starch   1/2 cup  
milk   6 cups  
sugar   1 cup  
vanilla   1 tsp  
butter   1/2 stick  
salt   pinch  

 

METHOD

  • combine eggs, cornstarch and 1 cup of milk in a small bowl

  • whip briskly with a wire whisk

  • in a large pot, combine the milk, sugar and salt

  • stir occasionally and bring to a boil

  • add the eggs and cornstarch into the boiling mixture

  • keep burner on high and stir vigorously until the mixture thickens

  • take off heat

  • stir in the vanilla and butter

  • transfer the custard into a cool pan or container and refrigerate until thoroughly cooled (about 2 hours)

  • place in serving bowl or tarts and serve

NOTES

  • after it has cooled, pour into a cooked pie shell.  top with fresh fruit and a glaze of your choosing.

  • 1 recipe is enough custard for 2 10" pies
