vanilla custard
from the queen of
pies -
esther newbery
ian's mom makes the
most scrumptious pies. she uses this for the custard in her fresh
fruit ones. it's so yummy
INGREDIENTS

eggs |
|
4 |
|
|
corn starch |
|
1/2 cup |
|
|
milk |
|
6 cups |
|
|
sugar |
|
1
cup |
|
|
vanilla |
|
1 tsp |
|
|
butter |
|
1/2 stick |
|
|
salt |
|
pinch |
|
METHOD
-
combine eggs,
cornstarch and 1 cup of milk in a small bowl
-
whip briskly with a
wire whisk
-
in a large pot,
combine the milk, sugar and salt
-
stir occasionally
and bring to a boil
-
add the eggs and
cornstarch into the boiling mixture
-
keep burner on high
and stir vigorously until the mixture thickens
-
take off heat
-
stir in the vanilla
and butter
-
transfer the
custard into a cool pan or container and refrigerate until
thoroughly cooled (about 2 hours)
-
place in serving
bowl or tarts and serve
NOTES
-
after it has
cooled, pour into a cooked pie shell. top with fresh fruit and
a glaze of your choosing.

1 recipe is enough
