cranberry lemon loaf
favorite festival foods cookbook

This was actually just a lemon loaf recipe, but I added cranberries to it and it was so yummy!  I love the tart flavors of the lemon and cranberry.

 

INGREDIENTS

 

flour   1 1/2 cups  
salt   1/4 tsp  
baking powder   1 tsp  
lemon rind   2 Tbsp, grated  
butter   1/2 cup  
white sugar   1 cup  
eggs   2  
milk   1/2 cup  
cranberries   1 cup  
       
glaze:      
white sugar   2 Tbsp  
lemon juice   2 Tbsp  

 

METHOD

  • cream together the butter, sugar and eggs.  beat until light

  • sift together flour, salt and baking powder

  • add these dry ingredients together alternately with the milk

  • fold in grated lemon rind and cranberries

  • pour into greased or lined loaf pan and bake at 350 degrees for 55-60 minutes

  • cool 5 minutes in the pan

  • combine glaze ingredients and pour over top of the warm loaf and let soak in, while in pan

  • remove from pan when cool
