cranberry lemon loaf

This was actually just
a lemon loaf recipe, but I added cranberries to it and it was so yummy!
I love the tart flavors of the lemon and cranberry.
INGREDIENTS

1 1/2 cups |

salt |
|
1/4 tsp |

baking powder |
|
1 tsp |
|
|
lemon rind |
|
2
Tbsp, grated |
|
|
butter |
|
1/2 cup |
|
|
white sugar |
|
1 cup |
|
|
eggs |
|
2 |
|
|
milk |
|
1/2 cup |
|
|
cranberries |
|
1 cup |
|
| |
|
|
|
|
glaze: |
|
|
|
|
white sugar |
|
2 Tbsp |
|
|
lemon juice |
|
2 Tbsp |

METHOD
-
cream together the
butter, sugar and eggs. beat until light
-
sift together
flour, salt and baking powder
-
add these dry
ingredients together alternately with the milk
-
fold in grated
lemon rind and cranberries
-
pour into greased
or lined loaf pan and bake at 350 degrees for 55-60 minutes
-
cool 5 minutes in
the pan
-
combine glaze
ingredients and pour over top of the warm loaf and let soak in,
while in pan
-
remove from pan
when cool
