cranberry lemon loaf

This was actually just a lemon loaf recipe, but I added cranberries to it and it was so yummy! I love the tart flavors of the lemon and cranberry.
INGREDIENTS
| flour | 1 1/2 cups | ||
| salt | 1/4 tsp | ||
| baking powder | 1 tsp | ||
| lemon rind | 2 Tbsp, grated | ||
| butter | 1/2 cup | ||
| white sugar | 1 cup | ||
| eggs | 2 | ||
| milk | 1/2 cup | ||
| cranberries | 1 cup | ||
| glaze: | |||
| white sugar | 2 Tbsp | ||
| lemon juice | 2 Tbsp |
METHOD
cream together the butter, sugar and eggs. beat until light
sift together flour, salt and baking powder
add these dry ingredients together alternately with the milk
fold in grated lemon rind and cranberries
pour into greased or lined loaf pan and bake at 350 degrees for 55-60 minutes
cool 5 minutes in the pan
combine glaze ingredients and pour over top of the warm loaf and let soak in, while in pan
remove from pan when cool
