easy spinach dip
from kim plesman

We went to Felicity's birthday party the other day and Kim had made this - it's so delicious!

 

INGREDIENTS

 

Bacon 10 slices  
Frozen chopped spinach (thawed) 1 (10 oz package)  
Cream cheese 1 (8 oz package)  
Green onions, chopped 1/3 cup  
Tomato, diced 1 cup  
Mozza cheese, shredded 1/2 cup  
Cumin 1/4 tsp  
Salt 1/4 tsp  
Black pepper 1/4 tsp  
Garlic powder 1/4 tsp  

 

METHOD

  • Place bacon in skillet, cook over med. high heat until evenly brown. Drain, crumble and set aside.

  • In a med. saucepan over med. heat, cook and stir the spinach, salsa, cream cheese and green onions until the cream cheese has melted.

  • Mix in the crumbled bacon and tomatoes.

  • Remove from heat.

  • Mix in the mozza cheese, cumin, salt, pepper and garlic.

NOTES

  • I ate it at room temperature, but Kim says it tastes way better when heated.  Just throw it in the microwave.

  • Kim doesn't never uses 10 slices of bacon - just use as much as your conscience will allow :)
