easy spinach dip
from kim plesman
We went to Felicity's birthday party the other day and Kim had made this - it's so delicious!
INGREDIENTS
| Bacon | 10 slices | |
| Frozen chopped spinach (thawed) | 1 (10 oz package) | |
| Cream cheese | 1 (8 oz package) | |
| Green onions, chopped | 1/3 cup | |
| Tomato, diced | 1 cup | |
| Mozza cheese, shredded | 1/2 cup | |
| Cumin | 1/4 tsp | |
| Salt | 1/4 tsp | |
| Black pepper | 1/4 tsp | |
| Garlic powder | 1/4 tsp |
METHOD
Place bacon in skillet, cook over med. high heat until evenly brown. Drain, crumble and set aside.
In a med. saucepan over med. heat, cook and stir the spinach, salsa, cream cheese and green onions until the cream cheese has melted.
Mix in the crumbled bacon and tomatoes.
Remove from heat.
Mix in the mozza cheese, cumin, salt, pepper and garlic.
NOTES
I ate it at room temperature, but Kim says it tastes way better when heated. Just throw it in the microwave.
Kim doesn't never uses 10 slices of bacon - just use as much as your conscience will allow :)
