Crustless Pumpkin Pie ~ 6 servings / 2
2 large eggs 
2 cups canned pumpkin 
� cup(s) sugar 
� tsp. table salt 
1 tsp. ground cinnamon 
� tsp. ginger 
� tsp. ground cloves 
1 cups Pet-Ritz skimmed evaporated milk  Slightly beat eggs; mix all ingredients together. Spray 8-inch pie pan with non-stick cooking spray and pour mixture in. Bake at 425 degrees for 15 minutes. Reduce oven to 350 degrees and bake for additional 45 minutes. 
Special Notes: Top each serving with 2 tbsp. fat free (or light) frozen whipped topping..
One Star  Potatoe Soup
1 package frozen O'brien hashbrowns, with onions and peppers
1 large can FF, low sodium chicken broth (or 4-5 cans regular size)
1 package country gravy mix (LF)
Mix the hashbrowns with the broth, and some say to cook for 10 minutes, but I cook until a low boil. Mix the gravy mix with 1/2 cup water and stir in.  This is a very thick, delicious soup.
But I also add: 1 package frozen california blend veggies in the beginning,
1 package thawed, squeezed chopped spinach
1 can rinsed and drained cannelli beans.
I only added the one large can of broth, but will have to add more- it is very thick.
Taco Soup
l lb. ground beef, browned and drained add to it:
3 cans chili beans, not drained (Ranch Style Beans are good to use)
1 can whole kernel corn, not drained
1 can Rotel Tomatoes, not drained
1 can chopped green chilies, not drained
1 can tomato sauce
1 package taco seasoning
1 package dry ranch dressing mix
Stir all together and let it simmer for about 15 minutes and add a little water or broth if it is not soupy enough.
Stars . per serving - 2 stars per cup
Oreo Mousse
1 small pkg. sugar free instant pudding, chocolate or white chocolate
1-12 oz. container Cool Whip Free, thawed
4 reduced fat Oreo cookies, crushed, reserve some crumbs for the top
Mix the dry pudding with the Cool Whip and crushed Oreos. Pour into pan. Sprinkle the top with reserved crumbs, and freeze. 6 servings = 3 stars each
No Bake Cookies ~ 6 cookies = 1 start � cup dry oatmeal
1 tbsp. r/f chunky peanut butter
1 pkg swiss miss diet hot cocoa (25 cal)
3 tbsp. water (more if needed) Mix all together until mixture is very moist.  Drop one teaspoonful on foil and freeze.
Strawberry Pie II ~ Whole pie is 4 stars
Gyggles1 Got this off the WW boards, Feb 2002 1 box sf/ff vanilla cook and serve pudding
1 box sf/ff strawberry (any flavor) jello
2 cups water
fresh strawberries Line bottom of pie plate with sliced strawberries. Over med heat, stir 
in 2 cups of water with the pudding mix and stir until it thickens. After 
pudding  thickens, stir in the jello mix. Pour over strawberries and refrigerate 
until set (about 2 hours)

2 tablespoons cornstarch
1 (.3 oz) package strawberry-flavored sugar-free gelatin
4 packets sugar substitute
3 cups sliced fresh strawberries
1 (9 in) graham cracker crust Combine water and cornstarch in a medium saucepan; stir well. Bring to a boil, stirring constantly. Cook 1 minute. Remove from heat, and let cool slightly. Add gelatin and sugar substitute, stirring well. Gently stir in strawberries, and pour into crust. Cover and chill at least 3 hours. Calories 139, Fat 5.2g, Fiber 1.7g
