| Caramel Apple Salad 1 cup -2 stars 1 - 20 oz crushed pineapple (Do not drain) 4 unpeeled Red Delicious apples cut - up 1 sm box FF, SF instant butterscotch pudding (do not prepare, use dry) 1 8 oz fat free cool whip Mix all together and let set overnight Do Not make the pudding up you need to use it DRY! I mix the dry pudding with the can of pineapple with the juice, add the diced apples and fold in the cool whip. |

| Crockpot Sour Cream Salsa Chicken 4 serving: -4stars 4 skinless boneless chicken breast halves 1 package reduced-sodium taco seasoning mix 1 cup salsa 2 tablespoons cornstarch 1/4 cup light sour cream Spray the crockpot with cooking spray. Add the chicken breasts. Sprinkle with Taco Seasoning. Top with salsa. Cook on low for 6-8 hours. When ready to serve, remove the chicken from the pot. Place about 2 T cornstach in a small amount of water. Stir well. Stir the cornstarch mixture into salsa sauce. Stir in 1/4 cup of sour cream. |
| Coke Chicken ~ 4 servings -5 stars SEE PAGE 3 FOR A DIFFERENT VERSION I just got this off of a web site last week, and am making it this week Cindy Z. 4 boneless skinless chicken breasts 1 meduim onion 2 cloves garlic 1 cup catsup 1 can diet coke 1 1/2 cups minute rice (cooked) pam spray In a non stick pan, sprayed with Pam, sautee onions and garlic on meduim to high heat until brown. Add a little water and stir. Remove onion, garlic mixture from pan leaving as much liquid in pan as possible. Brown chicken on both sides. Add catsup, diet coke, and onion garlic mixture. Simmer on meduim heat until chicken is cooked. Remove chicken and continue to simmer sauce until it thickens a litte. Remove sauce from stove., add rice, stir. Put chicken breasts on top of rice mixutre and cover for about 5 minutes. This is a wonderful BBQ tasting dinner. I for myself, do not use minute rice, I prefer brown. As for using the crock pot for this reciepe, I would just throw everything in the pot and cook all day. mine is even simpler then the one posted...1 can of diet coke and 1 c. of ketchup. Dump, stir, add the chicken...walaaa...done when you get home (if you remembered to turn it on...been there, done that...not happy!!LOL!). I do it once a week. Traci E |
| Chocolate Eclair Dessert Recipe 36 (2 1/5") graham cracker squares 2 pkgs Jell-O sugar free vanilla instant pudding mix 2 cups nonfat dry milk powder (carnation) 4 1/4 cups water 1 1/2 cups cool whip light or free 2 tsp. vanilla 1-4 serving size pkg. Jell-O sugar free chocolate pudding mix 1 Tbsp. chocolate syrup Evenly arrange 12 graham crackers in a 9 x 13" cake pan. In large bowl, combine dry vanilla pudding mixes, 1 1/3 cups dry milk powder, and 3 cups water. Mix well using wire whisk. Blend in � cup cool whip and 1 tsp. Vanilla. Mix gently to combine. Spread half of pudding mixture evenly over graham crackers. Layer another 12 graham crackers over top. Evenly spread remaining pudding mixture over graham crackers. Top with remaining 12 graham crackers. In medium bowl, combine dry chocolate pudding mix, remaining 2/3 cup dry milk powder, remaining 1 tsp. Vanilla and remaining 1 1/4 cup water. Mix well using a wire whisk. Spread chocolate mixture evenly over top of graham crackers. Cover and refrigerate at least 1 hour. Just before serving, spread remaining 1-cup cool whip evenly over top. Drizzle chocolate syrup evenly over cool whip. Refrigerate at least 1 hour. Cut into 12 servings - 4 Freezes well |

| Creamsicle Jell-O ~ 4 servings / -3 stars Diana (losingtogether), Jan 2002 1 pkg (4 serving) sugar-free Jell-O (1 pt whole box) 3/4 cup boiling water 3/4 cup cold water 8 oz light, non-fat yogurt (aspartame-sweetened), any flavor Pour boiling water into jello, mix about 2 minutes until dissolved. Stir in cold water. Put in the fridge just until cool (not set). Whisk in yogurt, then let set about 4 hours.You may use any flavor jello/yogurt combination. |
