| Recipes Awesome Pumpkin Bread � 2 or 3 points per large slice 1 and � Cups whole wheat flour 2/3 Cup sugar 1 and � tsp baking powder � tsp baking soda � tsp salt 1 tsp cinnamon 1/8 tsp nutmeg � Cup regular (not instant or quick cook) oats 1 Cup canned pureed pumpkin 1/3 Cup milk 1/3 Cup unsweetened applesauce 1 tsp vanilla extract � Cup Egg Beaters or other egg substitute � Cup raisins 1. Preheat oven to 350 degrees. 2. Lightly spoon flour into dry measuring cups, level with a knife. Combine flour and the next 6 ingredients in a large bowl, stir to mix well. Then stir in the oats. 3. In another bowl, combine the remaining (wet) ingredients together and mix well. Add to flour/oats mixture and stir until just moist. 4. Spoon batter into a loaf pan coated with cooking spray (such as Pam). 5. Bake at 350 for 50-55 minutes, until a wooden pick inserted in the center comes out clean. 6. Cool 15 minutes in pan or on a wire rack, then remove from pan and cool completely before slicing. This recipe yields one loaf, but is easily doubled. The entire loaf has 1570 calories, 6.5 g fat and 35 g fiber. Translation: if you slice it into 8 slices, there 3 points per slice, at 10 slices there are 3 points per slice, and at 12 slices are 2 points per slice. If you omit the raisins, you remove 180 calories from the loaf total (fat and fiber content are the same) and there would now be 2 points per 10 or 12 slice loaf, and 3 points per 8-slice loaf.
