Cider Stew Recipe

2 pounds beef stew meat, cut in 1-inch cubes
3 TBLS olive oil
3 TBLS flour
1/4 tsp thyme, crushed
1 tsp sea salt or kosher salt
1/4 tsp ground black pepper
2 cups apple cider
2 TBLS white vinegar
1/2 cup water
5 potatoes, peeled and quartered
4 carrots, peeled and cut in chunks
1 onion, thickly sliced
1 stalk celery, sliced
Brown stew meat in oil in a large saucepan or stew pot.

Combine flour, thyme, salt, and pepper.  Add to meat.

Stir in apple cider, vinegar, and water.

Cook and stir until mixture boils.

Reduce heat, cover and simmer until meat is tender, 1 1/2 to 2 hours.

Add vegetables.  Cook until the vegetables are tender, about 35 to 45 mintues.

Serve with assorted bread and dinner rolls.
