(Grilled Spanish Mackerel Rolled with Shiitake Mushrooms, Carrots,
Snow Peas and Eggs)
For Teriyaki Sauce:
¾ cup Mirin (Sweet Sake)
½ cup Shoyu (Soy Sauce)
½ cup Tamari Soy Sauce
1 oz sugar
Boil all Mirin, Shoyu, Tamari Shoyu and sugar in a pot, reducing by
10%.
For Grilled Spanish Mackerel:
1 lb. spanish mackerel
1 dozen eggs
2 oz carrots
5 pieces shiitake mushrooms
10 pieces snow peas
7 oz sugar
2 cups Japanese soup stock
Salt, light soy sauce, flour
Lightly salt mackerel and set aside for about 2 hours. Slice and boil
carrots and mushrooms with Japanese soup stock, ¼ tsp. salt and
a tablespoon of light Soy sauce to have a light flavor. Also slice and
blanch snow peas and set in ice water. Scramble 10 eggs with 7 ounces sugar
and a tablespoon of light Soy sauce. Scramble eggs to 80-90% and stop cooking.
Add 2 more eggs and mix well.
Drain carrots, mushrooms and snow peas. Dust flour over vegetables and
mix well in scrambled eggs. Put this mixture over sliced mackerel. Roll
Spanish mackerel with plastic wrap and foil like sushi roll. Bind both
ends and steam for 10 minutes. Cut into proper size for one person, about
one inch. Remove wrap and foil, then grill with Teriyaki sauce over fish
until golden brown.
