Baked
Flounder Italian
- 4 Large flounder
fillets
- 3 medium tomatoes
- 1 cup Italian
dressing
- 1 Tbsp. Olive oil
- 1 Tbsp. chopped
dried parsley
- 1 Tbsp. chopped
dried chives
- 1 Tbsp. dried
Italian seasoning
- 1 & 1/2 cup
cheddar cheese, shredded
- 1/4 tsp. Pepper
Preheat oven to 375
degrees. Spray a large baking pan with cooking spray. Arrange the flounder
fillets in a single layer in the pan, not over-lapping if possible. Mix the
olive oil and Italian dressing, and Brush the ENTIRE amount on top of the
fillets. Slice the tomatoes and cover the fillets in a single layer. Mix
parsley, chives, pepper, and seasoning in a small bowl and sprinkle evenly
over the tomatoes. Place in Hot oven and bake for 10 - 12 minutes,
remove and sprinkle cheese over, replace in oven until cheese melts,
about 2 minutes.
