  Dumbo and the Pink Elephant Cakes

2 1/4 C flour
1 2/3 C sugar
2/3 C shortening
3/4 C milk
1/2 C Maraschino cherry juice
3 1/2 tsp baking powder
1 tsp salt
5 eggs whites
2 doz chopped Maraschino cherries
Creamy cherry frosting (recipe follows)
Basic frosting (for blue and black icing, recipe follows)
6 large marshmallows
flat-bottomed ice-cream cone
colored feather

Directions: Beat flour, sugar, shortening, milk, cherry juice, baking powder, and salt together. Add egg whites and beat. Fold in cherries. Divide batter between 3 8" round cake pans. Bake at 350 degrees for 25-30 min.Cut each cake like diagram. Cover two cakes with pink frosting and one with blue frosting. Place 2 marshmallow eyes on each cake and pipe pupils on the eyes with frosting. For the blue cake, Dumbo, stick the feather in his trunk. Invert the ice-cream cone on Dumbo's head for a hat and write Dumbo on the hat with frosting.

Creamy Cherry Frosting
4 C confectioner's sugar
1/2 C butter
1/2 C shortening
3 tbs Maraschino cherry juice
1 tbs milk
1 tsp almond extract
red gel food coloring

Directions: Beat all ingredients together and tint with read food coloring to make pink.

Basic Frosting
1/4 C butter
1/4 C shortening
2 C confectioner's sugar
2 tbs milk
1/2 tsp almond extract
blue and black gel food coloring

Directions: Beat together. Leave 1/4 C frosting white to use if need more blue and black. Tint 3 tbs of frosting black and the rest blue.


  Chocolate Marshmallow Jumbo Juniors

4 oz (1/2 C milk) milk chocolate, chopped fine
2 tbs heavy cream
6 large marshmallows
decorative candies for eyes

Directions: Place chocolate in bowl. Heat heavy cream in saucepan to boil then poor cream over chocolate. Let stand and stir to melt chocolate fully. Cover and refrigerate mixture about an hour or until solid. Cover a baking sheet with wax paper. Remove hardened chocolate from refrigerator. Scoop heaping teaspoon of it and roll into a ball and put on baking sheet. Makes 12 balls. Slice 2 rounds about 1/4 inch think from a marshmallow and attach to sides of chocolate balls. Use remaining marshmallow to form a trunk and attach. Decorate with candy for eyes.


  Peanut Butter Dumbo Dunkers

1/2 C peanut butter
1/2 C butter
3/4 C brown sugar
1/2 C sugar
3 tbs milk
1 egg
1 tsp vanilla
2 C flour
1/2 tsp baking soda
1/8 tsp salt
raisins for eyes
candy for mouth

Directions: Cream peanut butter, butter, and sugars together. Blend in milk, egg, and vanilla. Stir in flour, baking soda, and salt. Roll dough out to 1/4 inch thickness. Use round cookie cutter and cut circles. Put half the circles on cookie sheet. Cut the rest of the circles in half and place them as ears on the sides of the circles on the cookie sheet. With left over scraps roll them into a trunk and press into the circle head. Put 2 raisins for eyes. Bake at 350 degrees for 10-12 minutes.


  Timothy Peanut Butter Mice

2 1/2 tbs butter
1/2 C peanut butter
2 1/2 C tbs dark brown sugar
3/4 - 1 C confectioner's sugar
3 tbs ground peanuts (optional)
More confectioner's sugar for decoration
Black and red licorice for tails
Small candies for noses
Mini chocolate chips (optional)

Directions: Melt butter in microwave for about 20 seconds. Add peanut butter, brown sugar, 3/4 C confectioner's sugar, and peanuts to the butter and mix. To form mice, take small pieces of mixture and roll between palms. Make large balls for bodies and small balls for heads. Pinch head to look like mouse and narrow body to be like a mouse. For ears form triangles out of mixture and attach to head. Refrigerate if dough gets to soft while working. Use a toothpick to make eye- holes and whiskers. Use small candy for a nose and a piece of licorice for a tail. Use mini chips for paws. Store in refrigerator.
